Vegan Keto Pad Thai

(serves 2)


252cal - 8g carbs - 18g protein - 3g sugar - 16g fibre - 16g fat


Ingredients:


- 1 Eat Water Noodles

- 2 cloves of garlic

- 1/2 tsp grated ginger

- 1 tbsp sesame oil

- 200g chopped firm tofu

- 1 tbsp rice vinegar

- 2 tbsp brown erythritol

- 1 red pepper chopped

- 1/4 cup soy sauce

- 2 spring onions chopped


Method:


1. Make a sauce by mixing the soy sauce, rice vinegar and brown erythritol


2. Heat the oil on a large non stick frying pan and add the spring onions, ginger and garlic, sauté for a few minutes


3. Add the red peppers and tofu and fry for around 10 minutes


4. Add the noodles and sauce and cook for further 10 minutes


5. Serve and enjoy!
