For the brownies:
220g Medjool Dates
150g Peanut Butter
40g Cocoa Powder
50g Protein Powder (optional)
For the pistachio layer:
100g Pistachio Butter
Slimfoods Zero Calorie Maple Syrup
For the topping:
100g Dark Chocolate, melted
Instructions:
1. Add the Medjool dates and peanut butter to a food processor and blend until you have a smooth and sticky mixture.
2. Sift in the cocoa powder and protein powder (if using) and blend again to combine.
3. Line an 8x8 inch baking dish with parchment paper. Press the brownie mixture evenly into the prepared pan.
4. In a separate bowl, mix the pistachio butter with maple syrup until you reach your desired sweetness. Spread the pistachio layer evenly over the brownie base.
5. Melt the dark chocolate over a double boiler or in the microwave in short bursts, stirring frequently. Pour the melted chocolate over the pistachio layer and spread evenly.
6. Transfer the pan to the freezer and chill for at least 1-2 hours, or until the chocolate is completely set. Slice the brownies into 10 squares and enjoy!
