These delightful individual cheesecakes are perfect for a refreshing and light dessert. With a no-bake base and a creamy protein-packed filling, they're surprisingly simple to make and so delicious.
Recipe Makes 3 Jars.
Ingredients:
Base:
75g light digestive biscuits
30g creamy peanut butter
2 tbsp no-calorie maple syrup @slimfoodsonline
Filling:
100g strawberries, halved
500g 0% fat yoghurt
100g light cream cheese, softened
60g vanilla protein powder
Toppings:
Peanut butter
Melted dark chocolate
Crushed light digestive biscuits
Directions:
1. Process the digestive biscuits into fine crumbs using a food processor or blender.
2. In a bowl, combine the biscuit crumbs with peanut butter and maple syrup. Mix well until it forms a slightly sticky dough.
3. Divide the biscuit dough equally between the 3 jars and press firmly to form the base.
4. Using an electric mixer, beat together the yoghurt, softened cream cheese, and protein powder until smooth and creamy.
5. Divide the strawberry halves between the jars, placing some against the sides for decoration.
6. Gently pour the cheesecake filling over the biscuit base.
7. Refrigerate the jars for at least 30 minutes, or until firmly set.
8. Before serving, drizzle with your choice of toppings - peanut butter, melted dark chocolate, or crushed digestive biscuits.
