Garlic Noodles with Crispy Chicken

Ingredients:

Crispy Chicken:

ā€¢ 1 chicken breast

ā€¢ 1 beaten egg

ā€¢ 25g cornflakes, crushed



Chicken Seasoning:

ā€¢ 1 tsp paprika

ā€¢ 1 tsp garlic powder

ā€¢ 1/2 tsp cayenne pepper

ā€¢ 1/2 tsp salt

ā€¢ 1/2 tsp black pepper



Garlic Noodles:

ā€¢ 100g spaghetti

ā€¢ 1 tsp olive oil

ā€¢ 3-4 cloves of garlic, finely chopped

ā€¢ 1 red bell pepper, finely chopped

ā€¢ 3-4 fresh onions, finely chopped

ā€¢ 50g small mushrooms

ā€¢ 1 tbsp light dark soy sauce

ā€¢ 2 tbsp no-calorie maple syrup @slimfoodsonline

ā€¢ 1 tbsp no-calorie ketchup @slimfoodsonline


To Serve:

ā€¢ Sliced cucumber


Instructions:

1. Preheat the oven to 400Ā°F (200Ā°C).

2. In a shallow dish, combine the crushed cornflakes with the paprika, garlic powder, cayenne pepper, salt, and black pepper to create the chicken seasoning mixture.

3. Dip the chicken into the beaten egg, and coat it evenly in the cornflakes mixture.

4. Fry the chicken in the pan for 12-15 minutes or until golden brown and crispy.

5. Then cook the spaghetti according to package instructions. Drain and set aside.

6. In a large pan, heat olive oil over medium heat. Add the chopped garlic, red bell pepper, fresh onions, and mushrooms. SautƩ for 3-4 minutes or until the vegetables are tender.

7. Then add the soy sauce, maple syrup, and ketchup. Pour over the sautƩed vegetables and stir well.

8. Add the cooked spaghetti to the pan, tossing everything together to ensure they are well coated with the sauce.

9. Serve the garlic noodles with crispy chicken on a plate, garnished with sliced cucumber.
